Bellvale Pinot Noir 2005The 2005 Pinot Noir was made using traditional methods, including a cold soak of the crushed grapes prior to fermentation, hand-plunging of the ferment and a short period of extended maceration after the fermentation finished. A small proportion of stalks were added to the ferment. The wine was then matured in new and used French oak barriques from a range of the highest quality coopers.The wine will gain fragrance and complexity in the bottle until at least 2009.
